"I think of myself as a Mexican chef with a wide knowledge of traditional Mexican cuisine, but I'm also heavily influenced by many cultures from my experiences in the U.S. There's so much more to Mexico than restaurants with mariachi bands and piñatas. Oscar Wilde said it best: 'To define is to limit.'
